Week of Weeknight Meals: May 2024

Feeling hungry today? If so, I have a blog post to share to hopefully get your tastebuds extra excited for dinner tonight! I managed to snap pictures of our weeknight meals last week to share with you guys today as part of my Week of Weeknight Meals series. This series began as a way for me to bring back the old days of the blog when I’d share photos of my food to share on the blog in the morning, afternoon and evening every single day. That is no longer a feasible blog schedule for me with three kids in the mix, so it’s my hope that this blog post still gives you guys a little bit of an idea of what dinnertime looks like around here these days. Pictures are snapped in real-time and no fancy food photography is allowed!

Last week’s meals were what I’m sure you’ve learned to expect from me: Easy! Below you’ll see a combination of shortcut meals and tried-and-true favorites and hopefully at least one meal below will pop out at you and give you an idea for an upcoming dinner you’d like to make in your home.

Note: I’ll try to include the boys’ meals in next month’s post! My brain is apparently melting and when I went to include them in today’s post, I could only remember three of the five meals. Womp, womp.

Week of Weeknight Meals: May 2024

  • Monday: BBQ Ribs with Curried Corn and Roasted Zucchini

Danggg these ribs were delicious! I bought the pre-made BBQ ribs from ALDI (one of their seasonal items) and they easily reheated in the oven as I roasted some zucchini in olive oil and garlic salt. On the side we also had curried corn (our favorite — just frozen corn heated up with butter, garlic salt and curry powder) and we loved this simple Monday meal so much.

  • Tuesday: Sheet Pan Salmon, Sweet Potatoes and Brussels Sprouts

This was essentially a sheet pan meal, though everything cooked for a different amount of time. The sweet potatoes went into the oven first and continued cooking when I added the brussels sprouts and then, finally, the salmon! (I marinated the salmon in the same sauce/marinade I use for my salmon bites.) Tuesday night’s dinner is exactly what dinners look like in our house when I come up with a dinner plan at the last minute: I figure out which protein I want to serve and look around the fridge for a veggie to pair with it and then grab a potatoes, brown rice or a carb of some sort from the pantry. It’s one of those mindless meals that is still very tasty!

I love this chicken and chickpea salad year-round but especially this time of year, when cold, produce-packed salads simply call to me. It’s so incredibly flavorful and filling in a way that doesn’t make me feel overly stuffed. I made sure to make enough of the salad on Wednesday night so I could enjoy it for lunch leftovers, too!

Ryan was in Chicago for work on Thursday night and since I was riding solo, I decided to keep dinner extra easy for myself and picked up sushi from Publix. Easy and tasty!

I wonder how many times I’ve made this crockpot chicken corn chili? I truly have no idea but it’s A LOT and for good reason. It’s one of the easiest crockpot recipes out there (zero chopping required) and seriously delivers in the flavor department. I’m actually planning to make a double batch of this chili today to freeze and bring with us to Chattanooga this weekend. It reheats well and I figured it would be nice to have on hand to make dinner easy for our family, my parents and sister’s family during Ryan and Ross’ upcoming Half Ironman race weekend!
